When Gordon Ramsay says “add a dash of olive oil,” what he actually means is: add a genuinely dangerous amount of olive oil. Anyone who’s ever lost themselves for three starving hours to his YouTube recipe videos will tell you that. The only thing he likes more than olive oil is breaking people’s spirit.
And it goes without saying that drenching a pan in oil is the first step in his guide to cooking the perfect steak. The foul-mouthed chef offered up his recipe, first featured on Masterchef, yesterday to celebrate the 4th of July.
It differs somewhat from your average steak recipe, of course. It features a flambé sauce for one, so don’t attempt it unless if you’re emotionally attached to your eyebrows in any way.
The steps are:
Season both sides of steak with salt and pepper
A “touch” of oil in the pan
Steak in, surrounding by rosemary and a sprig of thyme
Get a sear in both sides, and let it rest off the pan
Throw butter, mushrooms and chopped garlic & shallots into the pan
Once you’ve got colour on the mushrooms, pour your cognac in and flambé
Steak goes back in, with a couple of table spoons of stock and cream
Bring to the boil and coat steak with sauce
Finish with chopped fresh parsley
